 Arroz con Pollo


Ingredients
1 PD. Chicken drumsticks
1 PD. Boneless, skinless chicken thighs 
1 Green bell pepper
1 Red bell pepper
1 Yellow onion 
8 Garlic cloves 
8 oz. Tomato sauce 
1 cup Dry white cooking wine
5 cups hot water 
1 tbsp. Sazon completa
28 oz. Arroz valencia 
2 tsp. Powdered yellow coloring
1 cups Peas
1/2 cups Roasted red peppers
1 room temp Corona 
Salt to taste 

Instructions

In a bowl, mix your chicken with your sazón completa. 

In another bowl add in your washed rice with a cup of water and the yellow coloring powder. Mix and let sit to stain the rice.

Now Sautee your onions, bell peppers & garlic in olive oil over medium heat for 4-5 min until translucent.

Now to this add your tomato sauce, cooking wine, chicken and 2 cups of water and let this cook over medium heat for 10-15min. To cook the chicken more before adding your rice.

To this, now add 3 more cups of water & a splash of more cooking wine, stir and add in your rice. Taste for salt and add more to your liking. Bring this to a boil & drop the heat to low, cover and let this cook / simmer for 15min. Uncover, add in your beer and keep cooking for another 10 min. Until your rice is fully cooked. 

Top with peas, roasted red bell peppers and chopped cilantro.
