8 egg yolks
2 cups sugar
1 cup flour
1quart milk
Over Medium heat stir all ingredient until thick making sure their are no lumps. I use a whisk so I'm sure of no lumps.
Cream can be used in : torte's, cream puffs, Italian cheese cake, eclairs

Tuna Salad without Mayo
2 cans of Bumble Bee White Albacore Tuna
12 large green olives
1 small red onion
1 large or 2 small lemons juiced
1/4 cup good virgin olive oil.
Rinse tuna in water and drain. Add olives cut in quarters, diced red onion in bite size pieces. Add lemon juice and olive oil. Mix and refrigerate before serving.
Can be served with a green salad mixed together.

Amaretto Cookies
Cookies with Pine Nuts
2 egg whites
7 oz. almond paste
3/4 cup sugar
1/2 cup powdered sugar
1 cup ground almonds
1/2 tea. van.
1/4 cup pine nuts
Preheat oven to 350F.
In a food processor or blender mix egg whites and almond paste. If the paste is hard, pre-soften in microwave.
Once batter starts to form slowly add remaining ingredients except the pine nuts and continue mixing until the dough is sticky. Drop by the teaspoonfuls onto a lightly greased sheet of aluminum foil on a cookie sheet ( the cookies will stick if foil isn't greased). Press a few pine nuts onto the top of each cookie. Bake 15 to 20 minutes. Remove from oven and let cool completely on the foiled cookie sheet.
Makes about 30 cookies

Roasted Sweet & White Potatoes
4 sweet potatoes peeled and cut into 1 inch squares
2 white potatoes peeled and cut into 1 inch squares
1/4 honey Orange Blossom
1/4 olive oil
3 tea. ground cinnamon
sea salt
ground pepper
In a mixing bowl drizzle the potatoes with oil, honey, cinnamon, salt and pepper. Lay the potatoes out in a single layer on a roasting tray. Roast 500 oven for 25 to 30 mins .... or until tender.
